Perfectly rolled and sliced, this Swiss Roll is a delectable chocolate sponge cake with a layer of cream cheese icing and dark luscious cherries on top.

A wonderful holiday treat are Swiss rolls!

You can use blueberries, raspberries, strawberries, or cherries in this recipe.

Ingredients


Cooking spray that doesn’t stick

Half a cup of all-purpose flour

¼ cup of cocoa powder without sugar

One teaspoon of baking powder

Half a teaspoon of kosher salt

Four big eggs

Half a cup of sugar

Two tablespoons of black coffee

One teaspoon of vanilla cream

Two tablespoons melted light butter

Half a cup of low-fat softened cream cheese

2 tsp of sugar powder

½ cup thawed, drained, and coarsely chopped frozen dark sweet cherries without sugar

Directions

For the Cake:

1. Turn the oven on to 325° F.

2. Line a jelly roll pan with parchment paper and coat with nonstick cooking spray.

3. Add flour to a small mixing basin and stir in baking powder, unsweetened cocoa powder, and salt until thoroughly blended. Put away for a later time.

4. Add the eggs, coffee, sugar, and vanilla to a stand mixer or an electric hand mixer in a mixing dish. Beat until thoroughly blended.

5. Add butter and beat.

6. Using a spatula, fold in the flour and cocoa mixture until smooth and just mixed. Avoid mixing too much.

7. In a jelly roll pan that has been prepared, Spread the batter evenly after adding it.

8. Bake in a preheated oven for about five minutes, or until the cake is set but not glossy.

9. Apply nonstick cooking spray as soon as the cake is taken out of the oven, and then place parchment paper over the top.

10. Start rolling the cake, including the top and bottom pieces of parchment paper, immediately on one of the pan’s long sides. Thus, the ends of the rolls will be the cake on the pan’s short side.

11. Give the cake half an hour to cool.

For the Filling:

1. Cream cheese should be added to a small mixing dish. Add powdered sugar and stir until smooth.

2. Gently unroll the cake after it has cooled.

3. Take off the parchment paper’s outermost layer.

4. Spread the cream cheese mixture evenly over the unrolled cake with a gentle touch.

5. Cover the cream cheese layer with cherries evenly.
Without rolling in the bottom piece of parchment paper, carefully roll the cake in the same manner as before.

6. Throw away the parchment paper at the bottom.

7. Make a fresh parchment paper layout. Roll the cake tightly to cover it entirely after placing it on one end.

8. For ten minutes, place the cake in the freezer.

9. Take off and throw away the parchment paper.

10. Slice the Swiss roll into ten 2-inch-thick pieces using a sharp knife.

Remarks

You can use an electric hand mixer in its place; a stand mixer is not necessary.
